（1） Equipment cleaning
新設(shè)備使用前，應(yīng)進(jìn)行清洗，否則剛開始幾鍋酒會有苦味及邪雜味。清洗部位包括：蒸煮鍋內(nèi)側(cè)、酒度可調(diào)鍋蓋內(nèi)側(cè)及內(nèi)膽導(dǎo)氣管內(nèi)側(cè)、冷卻器內(nèi)膽。

用耐熱磚（如土燒磚，不能用水泥磚），泥沙砌一個外方內(nèi)圓的灶。灶的內(nèi)徑比設(shè)備蒸煮鍋小5厘米左右，灶堂高度視燃料而定，以易燃燒、蒸煮鍋內(nèi)受熱快、受熱面大、受熱均勻為原則，否則會延長蒸餾時間，灶內(nèi)應(yīng)有兩層，以爐條間隔上層投放燃料，下層通風(fēng)，漏渣。煤為燃料，要配備小型鼓風(fēng)機(jī)。

蒸煮鍋內(nèi)置于灶上，入灶內(nèi)3-6厘米，鍋內(nèi)四周與灶之間密封。在蒸煮鍋上安裝酒糟排放管，管外端安裝水閥（開關(guān)）。蒸煮鍋一定要放平，否則水槽內(nèi)的水深淺不一而起不到密封作用，蒸煮鍋之上放酒度可調(diào)鍋蓋，鍋蓋之上連接導(dǎo)氣管，導(dǎo)氣管的另一端連接冷卻器，冷卻器下面是承受物（鐵架、磚墩等），冷卻器出酒口下面是承受物。
