新設備使用前，應進行清洗，否則剛開始幾鍋酒會有苦味及邪雜味。清洗部位包括：蒸煮鍋內側、酒度可調鍋蓋內側及內膽導氣管內側、冷卻器內膽。

清洗方法：先用清水沖洗后，加清潔劑刷洗一遍，再用清水反復沖洗。酒度可調鍋道內膽，導氣管內側、冷卻器內膽等不能刷洗的地方，用清水多沖洗幾次即可。酒度可調鍋蓋內膽用水管從上，下兩頭反復沖洗幾次，冷卻器內膽用水管伸內膽反復沖洗每個部位。

用耐熱磚（如土燒磚，不能用水泥磚），泥沙砌一個外方內圓的灶。灶的內徑比設備蒸煮鍋小5厘米左右，灶堂高度視燃料而定，以易燃燒、蒸煮鍋內受熱快、受熱面大、受熱均勻為原則，否則會延長蒸餾時間，灶內應有兩層，以爐條間隔上層投放燃料，下層通風，漏渣。煤為燃料，要配備小型鼓風機。

蒸煮鍋內置于灶上，入灶內3-6厘米，鍋內四周與灶之間密封。在蒸煮鍋上安裝酒糟排放管，管外端安裝水閥（開關）。蒸煮鍋一定要放平，否則水槽內的水深淺不一而起不到密封作用，蒸煮鍋之上放酒度可調鍋蓋，鍋蓋之上連接導氣管，導氣管的另一端連接冷卻器，冷卻器下面是承受物（鐵架、磚墩等），冷卻器出酒口下面是承受物。
